Is there a way to install roundcube v0.8.4 or v0.9.0beta in Zentyal 3.0 or is a new roundcube version available in the near future?

Not sure if you resolved this yourself, but I've just added RC 0.85 to my server with relatively little effort. Basically:
* Turn off/uninstall the webmail module
* Enable the web server - I didn't need virtual hosts so it serves from /var/www
* Change/set the MySQL root password - I couldn't find the location of it anywhere so followed instructions eg
http://ubuntu.flowconsult.at/en/mysql-set-change-reset-root-password/ - changing it doesn't seem to have upset anything in Zentyal, looks like it has set up it's own MySQL users for the various servers
* Once you have that you are ready to install any version of RC you like according to the RC instructions - and access it at
https://yourserver/yourroundcubepath
