Hello christian,
I think that those differences comes from my email setup. In my case, I'm using Zarafa for viewing my emails.
So, for fetching emails using IMAP with Zarafa, only the username is needed. But, when sending an email, since I'm using Zentyal's default SMTP server, the full email is needed (otherwise I'm not able to send emails).
Still, you may be right on the ports. On my side, only TLS is active on my SMTP.

e.g. I had slow network speed when browsing my shares with a high CPU load. It turns out that the logging system+clamd was slowing everything down. (This is what you can get when browsing shares with many files in it)
Second possibility
I had a "slow" Internet problem too.
Something that was funny: I was having a 80Mbps out of a theorical 24Mbps (16Mbps actual) results when using SpeedTest.net.
It turns out that it was due to the proxy configuration that was filtering 300MB objects. I did reduce the size to 16MB and everything was back to almost normal.

There is no difference between iPhone, Blackberry, Outlook, ThunderBird, Evolution or what ever other email client your using.
Just make sure that you did check the: My outgoing server requires authentification" along with "Use the same credential that my receiving server".
You may also be facing an other problem... Does your cell phone service provider allows to send email with your server? Are you sure that the port 25 isn't blocked?
** You may have to use some other port and do a port forwarding if your service provider is blocking port 25.
The last possibility that I see could be related with the security level (TLS/SSL/none).

The way that you'll name your server will depend of your external network configuration.
If your server is the gateway (the machine that is directly connected to the Internet), then in most cases you'll want your hostname to be "anubis.redcomputronics.com".
* I also do use cPanel everyday and it is the same behavior: cPanel is reporting a partial hostname and still, the real, full hostname is a FQDN.
That would be your possible configuration:
Anubis network configuration: ISP <-> Anubis (Zentyal server)
Anubis hostname = anubis.redcomputronics.com
Anubis = mail & www server
Anubis public IP: 123.123.123.123
You do want to send emails using redcomputronics.com (e.g. escorpiom@redcomputronis.cam) (some typos were done in the email - just in case that you are using it! )
DNS setup for your TLD (@ your registrar in most cases)
* Some DNS admin panel may differ from this exemple *
Then ask your ISP or datacenter to set your rdns to anubis.redcomputronics.com
Wait about 60 minutes and you'll be ready to send&receive emails.
Properly configured hostname, dns, spf & rdns on an email server is very important. This will improve your server reputation so less chance to end up in the junk mail folder.

extra configuration
You may also have other servers that are sending email on your behalf (e.g. your eCommerce that is hosted somewhere else). In that case, you must add an extra ipv4 entry.
e.g.

The 123.123.123.123 is your other server IP (be careful on this one. Many shared hosting configuration is sending from the server's IP and not the website IP - That is the case for default cPanel configuration.
