Hello all;
I want to ask about , installation of a mail server under zentyal environment , the lan has about 100 users.

Deploying mail with Zentyal is really straightforward if you already understand a bit of mail concept and distinguish between mail client, web mail, Zarafa features and stuff like this.
Ypu might be confused few minutes because of account management jumping in the middle but once you get it, this is very easy.

As ichat said, that reading documentation  ;)
