don't waste time analysing SMTP, network and stuff like this.
As I suspected in my second post, you're only facing some memory shortage resulting in I/O wait that generates huge system load.
Fix this first !
Is it expected for Zentyal backup to consume this amount of memory ?
I also notice your hardware configuration doesn't embed lot of physical memory.

Once fixed, you can work, or in parallel but there is definitely no relationship, on spam stuff.

I arrive at the same conclusion.

Our server memory is too short

Regarding the spam stuff we will move them to another server with a different IP
