does zentyal samba4 use s3fs or ntvfs?

According to the Samba Wiki,

s3fs is the default. To use the previous default, the ntvfs server use --use-ntvfs at provision time or add these lines from the smb.conf

server services = +smb -s3fs
dcerpc endpoint servers = +winreg +srvsvc
